Spicy Salmon Poke

Spicy Salmon Poke:
1/4lb. sashimi grade fatty salmon belly, diced
1/4 cup wonton crisps (salad topping)
1/2 tbsp. kewpie mayonnaise
1/2 tbsp. tobiko or masago
1/4 tbsp. soy sauce
1/4 tbsp. sriracha
1/8 tbsp. sesame oil
1 tsp. toasted sesame seeds
1/2 avocado, diced
1/2 green onion, thinly sliced

Instructions:
Make sure the salmon you are using is sashimi grade and highly marbled. To construct the spicy salmon poke whisk together kewpie mayonnaise, soy sauce, sriracha and sesame oil in a bowl until all ingredients are completely combined. Gently stir in salmon, green onion, tobiko (or masago) and avocado with a spoon until completely coated with sauce. Top with sesame seeds and wonton crisps and enjoy!
