Polynesian Crab Stack

Polynesian Crab Stack:
1 small cylinder mold (open-ended)
1/4 cup Maryland blue crab meat
1/4 cup red onion, diced
1/4 cup roma tomato, diced
1/4 cup cucumber, thinly sliced
1/4 cup pea shoots
3 tbsp. mango, diced
3 tbsp. avocado, diced
2 tbsp. peanuts, chopped
2 tsp. fresh cilantro, chopped

Ginger Lime Dressing:
2 tbsp. fresh lime juice
2 tbsp. water
2 tsp. fresh ginger root, finely minced
2 tsp. fresh garlic cloves, chopped
2 tsp. sugar

Instructions:
Begin by making the ginger lime dressing. Peel and finely chop the ginger root. Combine with chopped garlic, sugar, water and lime juice. For the best flavor, allow the dressing to sit overnight. To assemble the polynesian crab stack, lightly coat the inside of the mold with cooking spray and set on the center of your serving dish. With pea shoots at the bottom and crab meat at the top, tightly layer pea shoots, onion, cucumber, tomatoes, mango, avocado and crab into the mold. Sprinkle with chopped peanuts and cilantro. Gently remove the mold by lifting up, ensuring that the stack remains in tact. Finish with a drizzle of ginger lime dressing.
